The idea
Calling Mary 'Woman' again ties her to Eve and Cana. Giving her to the beloved disciple forms a new, legally real family — in Judaism adoption was binding, so Mary truly becomes the disciple's mother. Only once this is done can Jesus say 'It is finished.'

Calling Mary 'Woman' one last time seals her as the New Eve, 'mother of all living.' By legally giving her to the disciple — adoption was binding in Judaism — Jesus makes her a mother in a new family, and only then says 'It is finished.'
